三萜皂苷

三萜皂苷類(英語:Triterpenoid saponins)是苷元為三萜類的皂苷,是一類重要的天然產物。三萜是一類擁有30個碳原子的萜類物質,由六個五碳的異戊二烯單位組裝而來[1]。主要分佈在五加科蝶形花科石竹科桔梗科毛茛科玄參科葫蘆科等植物中[2]。三萜皂苷是植物抵禦病原體食草動物侵害的自我保護機制[3],並且在植物防禦侵害和信號傳導等方面均發揮重要作用[4]

三萜皂苷是一種兩親性化合物, 在水中可以形成穩定的泡沫, 常用於製作清潔劑發泡劑乳化劑[5][6]
